Rolo Stuffed Snickerdooles

I recently signed up for the meal plans through The Six Sisters and we have loved everything we have tried, but I wanted to share these and add them to the family cookbook! I had the day off today and I had an echocardiogram this morning, so I thought I would have the boys go to daycare for half of the day and meal prep.  Before my appointment I got the Chicken Cordon Bleu started in the crock pot and made the Chocolate Sugar Cookie Bars.  When I got home the house smelled wonderful with the chicken cooking and since our lives have been so busy I thought I would start the snickerdoodles.  I used to have cookie dough pre-shaped in the freezer so that we could take out a few, because fresh cookies are the best!
Rolo Stuffed Snickerdoodles
by: The Six Sisters
Ingredients:

  • 1/2 c. Butter
  • 1/2 c. Shortening
  • 2 Eggs
  • 3 c. all-purpose Flour
  • 2 t. Baking Powder
  • 1 t. Baking Soda
  • 1/2 t. Salt
  • 48 Rolo Candies
  • 2 T Sugar
  • 2 t. Cinnamon

Instructions:
Preheat oven to 400 degrees.  In a large bowl cream together butter, shortening, sugar and eggs.  Mix in flour, baking powder, baking soda and salt.  Use a cookie scooper or roll a 1 inch ball and place a Rolo in the middle and shapes around.  Mix together remaining sugar and cinnamon and roll each cookie ball into the sugar mixture and place on an ungreased cookie sheet.  Bake for 7-9 minutes or until golden brown, but still soft.
Note: If you want to freeze them into dough balls do everything the same, but put the tray in the freezer for 6 hours to overnight and then place into a gallon sized Ziploc bag.  Keeps in the freezer for up to 3 months.
This kid loves Rolo's so these were a score!

Mama is here to play!

We always love it when Mama comes to play, so we always take advantage of the time we have with her! I had wanted to roast a chicken for dinner, but one of my three little helpers turned the refrigerator temp all the way down so the chicken was back to being solid! But if there is one thing this women has taught me, it is to cook on the fly! We had her Baking Powder Biscuits with fresh jelly, scrambled eggs and bacon for dinner instead! I wish I could make biscuits, but every time I try they end up flat...that's with following all the directions too!
I am so glad Thing 2 was willing to roll-up his sleeves to help her out under close supervision of Thing 3!
It is also great that she has her cute little Rosie to take on walks! My boys love having their turn holding the leash and we have walked around the Temple and walked to the park! We love it!!!
Let's just say she is welcome to come back whenever she wants!

Easter with the Oliverson's

It has been great being so close to my little sister Nancy, but it doesn't seem like I ever see her with both of us working! I think I saw her 3-4 times last month because my mom was here and this might have been the first time I saw her this month! Because she is all I got here and she has "huge" Oliverson commitments I thought we would try a little sister get together the day before Easter.  Years ago my older sister Emily made a comment about keeping the Easter Bunny on Saturday and the spiritual Easter on Sunday which has thankfully stuck with me, so this worked out perfectly.  We had Hawaiian Haystacks at the park and while Nancy and I took a walk around the block with all the minions Jace hid all the eggs.  I attempted to be smart, but due to lack of communication it didn't work! There was supposed to be only 12 eggs per kid with a color/theme attached to each child.  This would have worked out well but I must not have let Nancy know of this plan and she filled all the eggs I gave her instead of counting them out!

Some how magically we were the only ones with this thought.  The park was all ours the entire time we were there and I hope we can continue doing something like this every year for Easter!

As appropriate for his age Easton inspected each egg before placing it in his basket.  I don't recall him eating any of the contents, but the candy was poured out and the egg thrown in before moving on to the next egg.
While we were driving to the park James yells out, "I get to help Brogan!" and so he did.  James patiently walked next to Brogan who was really more interested in drinking his juice from a huge red solo cup then what the plastic eggs might contain.  When we finally gave James clearance to track down the rest of the eggs the hunt was on!
So proud of his spoils (notice they are different shades of pink and purple, per his request)!
Uncle Jace did a good job hiding James eggs.  James requested his eggs to be in trees and not just in the grass like the little kids!

Meal Calendar

When I found out I had to go back to work I knew I would have to have to start planning our meals or else my kids would be eating cereal and grilled cheese sandwiches every night! I had seen this calendar on Pinterest a while back and I get so jealous that my little sister does such a good job at meal planning so I decided I needed to do better. So I found this cute magnet calendar from Target, 3 pieces of paper, modge podge, glass pebbles, a pair of scissors and some magnets.
After I printed out the meal ideas I applied modge podge to back of each pebble and pressed firmly to each of the meals.  After they were completely dried I used crafting scissors to cut around each pebble.  I tried to use a circular punch but the pebbles aren't a universal size, so you could see through the pebble and into the calendar.
Put some modge podge on the back to help seal and secure the paper.
Use a hot glue gun to adhere the magnets and press firmly to ensure the magnets stick well. I noticed that when I didn't press down on the magnets really well that the magnets can be tilted and tend to fall off.
This calendar was easy to assemble and it will save me some serious money if I can plan ahead and shop the sales. The kids and I sat down and decided what meals we all enjoy and I left some spots open for new recipes so we can expand our repertoire!
I also started thinking about meal prepping one day a week. On Monday I only worked a half day so I pulled out a bag if chicken (I almost wrote children) to cook up, a dozen eggs to boil, chopped up some salad and restocked the kids luches supplies.  I seasoned some chicken, cut some up for chicken nuggets/chicken parmesan, and put some in a bag with Adobe stuff and threw it in the freezer for next week. I figure if I have lunches made the night before I will have one less thing to stress about in the mornings. So far we have all been on time for school/work, so it must be working!
